Balance Health and Celebration This Canada Day

Let’s imagine how Canada Day celebrations look, with a twist! Traditionally, Canada day is marked with indulging in a variety of unhealthy choices; alcohol, chips, hot dogs and sweet treats galore! However, we’re here to tell you health and wellness doesn't have to take a day off, and you can still enjoy celebrating Canada Day without missing a beat! 

Here’s some recipes that are both fun and creative. You and your guests will love them this Canada Day!

SFL Nachos

1bag baked tortilla chips (recommend Garden of Eatin’ Brand or Simply Sprouted Brand)
  • 1 cup shredded cheese of choice
  • 1 can (14 oz.) black beans, drained and rinsed
  • 3 plum tomatoes, diced
  • 1/2 cup thinly sliced green onions
  • 1/2 cup pickled jalapeño slices (optional)
  • 2 tbsp minced fresh cilantro
  • Salsa, Greek Yoghurt & Guacamole for serving (optional) 

Place a single layer of tortilla chips on the bottom of a baking sheet. Sprinkle a layer of cheese and then one-fourth of the black beans, tomatoes, green onions and jalapeños over the chips. Top with another layer of the cheese. Repeat with the remaining ingredients to create 3 more layers, making each layer slightly narrower than the previous one so the nachos resemble a pyramid shaped mound.

Bake nachos in the oven at 425F for 8-10 minutes or until the cheese is melted and bubbly. Remove the tray from the grill and top the nachos with the cilantro.

Simply Guacamole

  • 2 avocados
  • 1 onion, finely chopped
  • 2 cloves minced garlic
  • 1 ripe tomato, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

In a large bowl, peel and mash avocados. Add onion, garlic, tomato, lime juice, salt and pepper to taste and mix well. Place the avocado pit in a bowl and refrigerate for 30 minutes to 1 hour.
